Roasted Veggies Please


Every time my sister comes to visit she inspires me to cook! Sometimes it’s something I already know how to cook, but she reminds me how delicious and easy it can be. In this case it’s roasted veggies, specifically cauliflower and broccoli. Stinks so good as I like to say!

Chop up the fresh veggies, place on a baking tray, drizzle a little olive oil over it, and sprinkle a little salt. Viola! Ready to bake until crisp or to your liking. This is the perfect nutritiously delicious side dish for any meal or can be the main meal too.

Our house is divided between roasted, steamed, or raw veggies, so I try to have a few options available at dinner time. Since my family is big, including a couple of hungry teenage boys, I typically pair with veggie infused pasta and sautéed ground turkey to fill them up. Whatever it is that inspires you to eat healthy with ease, go for it! And just remember, you are what you eat, so don’t forget your veggies!

    Those people that inspire us to be healthy are much appreciated. Hey, you’re one of them! :-). We have some people in our family that have inspired us in much the same way. Cousin Deena inspired us to do the exact same thing with cauliflower. Since then, we’ve found it’s an easy way to have a yummy treat at our home also. A little cumin or curry powder for seasoning makes a good thing even better! It is easy! It tastes so good and is really filling. Love it!
